Summer Fresh

Summer is all about FRESH FRUIT! Right now our strawberries are on and we are enjoying one of my favorite recipes...
Glazed Strawberry Tart
1 c. sugar
3 T. cornstarch
1/4 tsp. salt
3/4 c. orange juice (the juice of about 2 oranges)
1 T. lemon juice (the juice of about 1/2 of a lemon)
orange and lemon zest (zest a little lemon and orange and throw it in!)
1 quart strawberries, hulled and sliced (more if you like)
1 c. heavy cream
1/4 c. powdered sugar
1 tsp. vanilla
Baked tart shell
Combine the sugar, cornstarch, salt, orange juice, lemon juice and zest in a microwave safe bowl. Microwave on high for 3-5 minutes until the sauce thickens. Spoon into a bowl to cool.
When sauce is cool, toss with the sliced strawberries. Filled the baked and cooled tart shell with the strawberry mixture.
Before serving, whip the cream with the powdered sugar and vanilla. Spread over the berry filling. Serve immediately.
** This recipe is also great with raspberries.
** I often use a regular pie crust instead of a tart shell.

Horse Camp

We are so lucky that my parent's neighbor gives the girls a private horse camp every summer. Amy and her daughters spend mornings teaching the girls how to ride. Then Amy does crafts with them in the afternoon. Add a little swimming in the canal and it makes for a fun day. It was Maren's first year at horse camp. She loved to ride Addy. Best of all... she became a real cowgirl with a trophy and everything. Amy awarded it to her for falling off the horse for the first time. Don't worry - she didn't hit the ground and Amy caught her quickly. Cousin Natalie got horse camp started for us... Hannah on her horse, Peppy...
Isabelle even got a chance to ride... Definitely a good week at horse camp! Thanks Amy!

Flavor of the week

What is your favorite flavor of Aggie Ice Cream? Aggie blue mint is always a good choice. My new favorite is Chocolate Toffee Crunch. Now... how do I transport it 650 miles to Sandpoint without melting?

Fun Family

What do you get when you combine...
4 grandparents, 17 aunts, uncles & friends,
28 cousins & friends,
3 rafts & 4 former river guides?
A whole lot more than your typical family reunion! We spent the July 4th weekend enjoying all of our family & friends while camping and rafting on the Clark Fork river in Montana. I feel lucky to be able to spend time with both my family and Kirk's family and our good friends, the Riddles all in one fun filled weekend. The girls were in heaven with so many grandparents, cousins and aunts and uncles around. We also enjoyed... Archery
